In the mid 90’s and back in the garage days, I also wanted to build an interchangeable fillet blade kit. So, using a press, I designed the interchangeable hidden tang housing unit, but at the time, I didn’t have the machines and equipment to manufacture the interchangeable blades, so I worked with a reputable Oregon cutlery production company, and had them build a die so they could stamp out my 3 blade designs from surgical stainless steel. The kit turned out great and was very popular, but after I purchased my blade profiling CNC waterjet and began manufacturing our blade designs in house, the fillet kit got discontinued, (note, we do not stamp out any of our blades. All our blades are cut/profiled from plate steel using a fiber laser cutting machine). 

Late last year, I found a box of unfished housing units and a several dozen of the old blades and finished a few dozen. In the late 90’s we sold them for about $180. And now, we are selling them at or below cost. One day, we might redesign the kit and reproduce it if we can manufacture the blades using our existing production equipment and stock blade steel, (that’s a big if). But the kit would be a lot more expensive and I’m not sure how well it would sell in the $300 price range.
